betty crocker releases gluten-free recipe collection.

Readers! Have any of you seen this new Betty Crocker Gluten Free Recipe Collection? It’s available starting this month – both online and in select grocery stores – and we’re dying to know what it’s like (we haven’t found it yet in our neck of the woods). According to the Betty Crocker write-up, the magazine features “280 easy and delicious gluten free recipes” which were developed with the help of Jean Duane, Alternative Cook, who has a fair amount of gluten-free and dairy-free cooking under her belt. We hear that many of the recipes use GF Bisquick (new on grocery store shelves!) and Betty Crocker GF cake mixes as the base, and that the recipes range from banana bread, dinner rolls, homemade pizza (cover recipe), apple pie, apricot muffins with almond streusel topping, cornbread, sugar cookies, waffles, cinnamon scones, gravy, and sandwich bread.

    I haven’t yet tried any of Betty Crocker’s mixes, but I am hoping that someone will come out with an all organic line. Eating organic has been an sad sacrifice to the gluten free lifestyle!

    I’m not GF (but experiment) and seen this book in the bookstore. My only qualm was that it seemed you needed the Betty Crocker mixes for most of the recipes?

    The cover is certainly attractive though…

    This book has menus and recipes for sides and desserts in addition to the chicken.

    Gluten Free recipes is quite new. People with health problems can still enjoy eating. I certainly will grab a copy for this issue.

    I just made the banana cupcakes on page 88 of Betty Crocker’s Gluten Free Recipe Collection magazine and it is a “keeper”. I couldn’t find a Betty Crocker cake mix at my local Canadian grocery store so I used another brand. Also, I added 1/4 cup coconut to the recipe. I have made (more than once) the pizza dough on page 38, the cornbread on page 62, and apple-cranberry crisp on page 78 (although I couldn’t buy Rice Chex cereal, I used Crispix).
    I am very pleased with the outcome and so is the family. Thank you Betty Crocker!
